Job Details
Supports all activities of the research winemaking process. Makes wine in support of research projects according to standard procedures and to the specific needs of the project.

• Produces research-scale wine in support of research projects. Crushes grapes or uses frozen juice or reconstituted concentrates, makes chemical adjustments, inoculates with yeast, conducts punchdowns, monitors fermentations, makes chemical adjustments, racks and presses the wine, prepares wines for filtration and packaging, performs routine chemical treatments of the final wine before packaging, and packages wines for sensory analysis.
• Ensures wine is made according to agreed upon procedures and processes for both harvest and off-season experiments.
• Collects, collates, and documents all data collected during the winemaking and packaging processes, including chemical and sensory analyses using standard documentation and information systems.
• Collects samples from all points in the process and coordinates submission of samples for analysis using LIMS and other standard procedures.
• Performs and documents routine maintenance and cleaning of all equipment, including the crusher/destemmer, presses, fermenters, pressure cans, hoses, pumps, filters, and packaging equipment; maintains a clean work area.
• Assists in the management of the general operation of the Research Winery, including coordination of the arrival of raw materials and the delegation of work to the staff.
• Assists with the coordination of the collection of frozen juice for off-season experimentation.
• Assists in training harvest interns in winemaking processes and safety procedures.
• Ensures protocols and documentation meet corporate IMS requirements.
• Ensures all wines are produced and packaged in accordance to Good Manufacturing Practices.
• Ensures all wines are produced and documented in accordance to all TTB compliance requirements.
• Participates in bench tasting of wines produced in the Research Winery as part of making chemical adjustments and final bottling approval.
• Assists in the proper labeling, storage and shipment of packaged products.
• Assists in the acquisition and transportation of wine for packaging.
• Ensures the organization and efficient processing of cold room materials.
• Assists with the maintenance and organization of the wine inventory and wine library.
• Identifies, documents, and communicates improvement opportunities in the Research Winery.
• Assists in analysis of experimental results and writing reports as needed in support of research projects.
• Calculates addition rates for chemical adjustments and routine dilutions.
• Responsible for understanding and complying with applicable quality, environmental and safety regulatory considerations. If accountable for the work of others, responsible for ensuring their understanding and compliance.
• Must maintain satisfactory attendance, to include timeliness.

• Bachelor's degree (BA/BS) in Fermentation Science, Enology & Viticulture, Food Science, Microbiology, Chemistry, Chemical Engineering or related field from four-year college or university, plus 0 to 2 years experience; or equivalent combination of education and/or experience.
• Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or employees of organization.
• Computer skill requirements include: Basic MS Word, MS Excel, MS Access, and MS PowerPoint. Ability to type 35-40 wpm.
• Ability to work with mathematical concepts such as probability and statistical inference, and fundamentals of plane and solid geometry and trigonometry. Ability to apply concepts such as fractions, percentages, ratios, and proportions to practical situations.
• Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.
• Ability to work under different climatic conditions.
• Ability to follow established procedures to perform tasks that are somewhat difficult in nature, requiring frequent evaluation, originality or ingenuity.
• Ability to properly maintain a laboratory notebook and data logs for each unit operation.
• Knows the winemaking equipment, processes and procedures at assigned location.
